February 19th is not only the Birthday of the whales, but also a great reason to cook something delicious.
That is why I am sharing with you the recipe for the perfect biscuit, which will become the basis for your culinary masterpieces. Delicate and airy – you will definitely like it!

For a shape with a diameter of 20-22 cm or a square 18×18 cm, you will need:
Eggs - 4 pcs.;
Sugar - 120 g.;
Flour - 120 g. (or 100 g of flour and 20 g of starch);
Vanilla sugar - 1 tsp. (optional).

Break the eggs into a high bowl, add sugar and vanilla sugar. Beat with a mixer until a fluffy, light, thick mass is formed. It is necessary to beat starting at the lowest speed of the mixer, then gradually increase it to the maximum. Look at the consistency of the foam, it should become thick and light. When traces of the whisk of the mixer begin to remain, it means that it is enough to beat. Sift the flour 2-3 times, it will be saturated with oxygen, and the biscuit will be fluffy and airy. Add flour to the beaten eggs in small portions, gently stirring each portion with a silicone spatula or whisk, moving from bottom to top. Cover the bottom and sides of the split mold with baking paper, lay out the dough and smooth the surface. Before placing the dough form in the oven, scroll the form slightly around its axis. The dough will spread better and will not swell during the baking process. Place the biscuit in a preheated 180-190 °C oven for 20-25 minutes. Readiness is easy to check with a toothpick, it should come out completely dry. If pieces of dough stick to the toothpick, then the biscuit must be baked.
